Rempeyek Kacang/Indonesian Style Crunchy Peanut


 My third time to join Indonesian Food Party

ingredients:


200 g rice flour
100 g tapioca flour
5 lime leaves, thinly sliced
400 g - 500 g peanut
300 ml coconut milk
1 white egg
water, as required (about 500 ml)
salt
cooking oil 

spices to grind:
4 cloves of garlic
3 cm kencur (kaemferia galanga)
1 tablespoon roasted coriander
3 kemiri (candle nuts)

directions: combine all ingredients in a bowl and stir thoroughly. Heat the oil and fry the mixture over medium heat until golden brown on both sides. Drain on paper towel.
