Belitung style Fish Soup with Cassava: Gangan


My Grand mother and my mother used to make Gangan (Belitung style fish soup) for our family. We lived near seaside when I was a kid, no wonder I love seafood. Guess, what is the best part I love in this soup?. Cassava!! Singkong...ooohhh..singkong :)



ingredients:
500 g mackerel, discard inside, wash and cut into pieces
500 g cassava, cut into pieces
1 l water
2 bay leaves/daun salam
1 tablespoon tamarind paste + 100 ml hot water, sifted
1 teaspoon sugar, salt to taste

spices to grind: 3 shallots, 3 candlenuts, 2 cloves garlic, 2 cm ginger, 2 cm galangal, 3 cm turmeric, 4 bird´s eye chillies, 1 tsp shrimp paste/terasi/belacan, 2 cm lemon grass (take the white part only)

directions: Boil water in a saucepan. Add spices, tamarind juice, bay leaves and cassava. Lower the heat, add mackerel, salt and sugar to taste. Simmer until the fish and cassava quite tender. Be careful not to overcook or they will disintegrate.

mbak Retno, itu singkongnya beli yg segar? kalo di Jepang, adanya yang udah direbus dan beku.

to sefa: Ibuku asli belitung, alm.bapakku jawa...makanya namaku ada jawanya..he..he.
to shinta: Yang segerrr ada sih shin cuman lebih mahal aja, aku beli yang beku, ada yang udah di parut ada juga yang dah dipotong-potong sudah bersih nggak pake kulit.

di amerika latin singkong termasuk bahan utama n banyak juga sup yang dicampur singkong. ternyata di masakan Indonesia juga ada. jadi pengen nyoba resepnya

suamiku asal bangka, tetangga yah, disana ikan dimasak dgn nanas, tapi kalau sudah ada singkong disini mau coba ah.

Definitely, will try someday as I still have fresh cassava, but I have to buy the mackerel again. I used my Indian mackerel yesterday for mangut ikan kembung. hiksss

yeah... singkong ternyata ada dimana-mana ya... termasuk di soup. kita sekeluarga hobby jg mbak ma singkong. puasaan kmaren tiap hari ada menu singkong heheheh...maklum anak singkong

eh btw itu buttercream yg pakek putih telor, dah mateng lho, kan dah dipanasin bareng ma gula ^___^

Hallah dah lama ngidam singkong,berhubung disini jg mahal dan harus pesen, jd ditunda terus, tapi liat Gangan,wah...gak kuku, pengen bikin;)

mba Retno, mau nyontek nih, tadi ke pasar nemu singkong, lalu beli ikan kembung, masak ah
